Paella Pasta Salad


A play on Spanish Paella, this pasta salad can be served as a warm appetizer accompanied by a glass of Sparkling Rosé or a chilled salad for an upcoming potluck. You can even shove it straight into your mouth from the fridge on a long days end if that’s what you so desire.

Paella Pasta Salad

8 ounces chorizo
1 tablespoon garlic
splash of white wine
16 oz Orzo pasta
2 lemon, zested and juiced
1/4 cup red wine vinegar
1 tablespoon turmeric
1 tablespoon smoked paprika
1 pinch red chili flakes
1 red bell pepper, diced
1 small red onion diced
8 ounces thawed frozen pea’s
16-20 count roughly chopped shrimp ( save some for garnish if desired)
1/4 cup chopped parsley

Cook, rinse and drain pasta. Brown chorizo until crisp. Deglaze pan with white wine. Toss all ingredients together and garnish with parsley, shrimp and lemon slices. Serve room temperature or chill for at least one hour.
