There hasn’t been a dull moment this summer. Every single day off has been a fun filled adventure! One of my favorite things that has taken off in my community are summer outdoor movies. While they have always been around the venues have grown from city parks to cafe’s and breweries, altering the experience from mundane to magical.
I watched The Goonies, Pee Wee’s big adventure, and Dazed and Confused all under the stars with delicious food and drink in hand. When I realized that the Wizard of Oz fell on the Saturday before my mothers birthday, I thought up a grand idea for a picnic celebration. I packed up a basket of food, some pillows and blankets, and we had an amazing night.
I made some “Kansas Twisters” with egg roll wrappers and hamburger dip for filling. They were great, even though I got impatient with them, turned up the oven to broil and ended up slightly burning them….
They still tasted great, especially when we dunked them in some siraccha mayo!
“Emerald city salad” consisted of mixed greens, strawberries, toasted almonds, goat cheese crumbles and rasberry vinaigrette.
After the movie we had a hunk of hummingbird cake as requested by the birthday girl. I made it with a maple cream cheese icing and garnished with dried pineapple flowers.
