I don’t really “do” football. I love the idea of it.Tailgating, grilling, a few ice cold beers. Hmm, maybe I just like the food part of it….It’s just so long and I have such a small attention span. So I save up all my football watching for the big game day and just cheer when everyone else does and wait for the commercials.
We kept it simple this year with chips and dip, wings and some treats and I whipped up some cheeseburger quesadilla’s. I love a good quesadilla burger with all the goodies like sour cream, cilantro and salsa but for the game I really wanted to go in a cheesy, ketchupy, mustardy direction. I pretty much winged this entire process, but some of the best things come together when you just start throwing things in. Just take whatever you love in your burger, and throw it into the mix! You’re gonna probably have leftovers, I ended up just eating them for breakfast the next day.
4 Large flour quesadilla shells
1/2 pound ground beef
1 tsp worcestershire
salt, pepper and garlic to taste
1/4 cup diced onion
4 strips of bacon
1/2 cup shredded hash browns
1/4 cup cheddar cheese sauce
shredded cheddar cheese
shredded lettuce and diced tomato for garnish
Brown the hamburger with the onion and season with salt, pepper and worcestershire. Drain and set aside.
Wipe down the pan and fry off the bacon, reserving any grease. Set bacon aside and bring pan back up to temp. Fry hash browns until nice and crispy.
In a medium mixing bowl combine hamburger, crumbled bacon, hash browns and cheese sauce and stir until incorporated. Taste and add any desired seasonings (perhaps a splash of hot sauce).
Sprinkle each shell with shredded cheese and spread the burger mixture on half the quesadilla. Drizzle ketup and mustard and throw in some of the diced pickle over the half with the mixture, then fold.
Fry the quesadillas in a lightly oiled pan over medium heat just until the outer shell is crispy and brown and the filling is melty and cheesy. MMMMMM. Cheesy
