Bean and Tortellini Soup
3 Strips of thick cut bacon, diced
1/3 cup diced carrot
1/2 cup frozen diced onion and peppers
1/2 rinsed frozen spinach
1 cup frozen tortellini ( I used frozen beef)
2/3 cup prepared beans ( I used homemade navy beans, drained)
4 cups vegetable stock
Saute Bacon and veggies until veggies or tender. Add spinach.
I used the hot water from the tortellini to make four cups of vegetable stock from base. Add stock, beans and tortellini and let simmer on low for 20-30 minutes.
